La Cucina di Parillo (Parillo's Kitchen) is located just off Exit 27 of the NYS Thruway on Amsterdam's South Side [One Port Jackson Square, (518) 842-9693]. My brother Joseph, along with my brother-in-law John and I, built it from the ground up. There's a large pavillion attached to it with four regulation size, lighted bocce courts right outside the front door. Out back there is a horseshoe pit, room for volley ball and a basket ball hoop. Three separate bocce leagues occupy the courts Tuesday through Thursday nights from early May through late August. The weekends usually bring tournaments, clambakes, family reunions and other outdoor events to the courts and pavillion. When we opened, in 1992, we built our business around the sale of our own prepared foods. We made all kinds of sauces, and Italian specialties in familiy size portions as well as in quantity for parties or other gatherings. My brother Joe is now the sole owner of of the deli and has expanded it to include a beatutiful indoor seating area with a full service bar. The centerpiece of the place is a wood-fired pizza oven that Joe and a few of his friends built. It produces true Neopolitan style pizza that you have to taste to believe! You can reserve the pavillion for an event by emailing me for information. Our Pepper Sticks are also prodced in the same building. I now operate a small food processing facility that produce the snacks. Our Original Pepper Sticks have been a favorite snack of family and friends for years. My mother started making them for my brother and I to serve as bar snacks at the Armory Grill. They are a variation of an old traditional recipe for a hard pepper biscuit sometimes called a taralle. The taralle is a knot shaped biscuit that is boiled and baked like a bagel execpt that it is crisp instead of chewy. Our Original Pepper Sticks are pencil shaped and crispy and are seasoned with black pepper and fennel. Try just one of these and you'll never go back to chips and pretzels! |
